I enjoy crockpot meals so much that I own five of them and have my eye on another one I want! I cook only for me and don’t mind leftovers, so I like to fix dishes that will give me 2 or 3 servings and maybe some to freeze for later. Using a crockpot for these types of meals is perfect and easy.
Try this Green Chile Chicken with a delicious Garden-Fresh Salsa Verde.

Crockpot Green Chile Chicken Recipe

3 hr, 30 Cook Time
3 hr, 35 Total Time

Ingredients
- 6 – 8 Boneless Skinless Chicken Thighs, thawed
- 1 Can Green Chiles {4 oz.}
- 2 tsp. Garlic Salt
- Optional: Add in ½ cup Diced Onions for some extra flavor!
Instructions
- Cook chicken in crockpot on HIGH for 3 hours or LOW for 6 hours {covered}
- After 3 hours on HIGH or 6 hours on LOW, drain juices from crockpot
- Mix together green chiles and garlic salt. {and optional onions}
- Pour mixture over chicken, and cook on HIGH for 30 more minutes {covered}
- Remove chicken from crockpot, and shred with a fork.
- Serve with all the fixins for tacos, or wrapped up in burritos and include plenty of Garden-Fresh Salsa Verde. YUM!
